Here is a little something that hits the spot for breakfast lovers. It has everything that you need to be fulfilled as well as left overs. I call it my: Farm Fresh Mediterranean Breakfast Casserole. See below for ingredients and prep. Feel free to add or subtract ingredients, like fresh tomatoes, zucchini, squash, mushrooms. I didn't have these on hand. Maybe it should be called, "Everything But The Kitchen Sink!" I hope you enjoy! Today's Breakfast: Farm Fresh Mediterranean Breakfast Casserole
Ingredients: (Chopped/diced)
-Farm Fresh Eggs (6) (my farm)
-Spinach (my farm-chopped)
-Bell Peppers (Red & Yellow chopped)
-Garlic (Fresh & chopped)
-Onion (choppef)
-Fresh Thyme (my farm)
-Fresh Rosemary
-Cheese (Swiss & Guerye blend)
-Meat/no meat (Turkey Sausage or Mild Breakfast Sausage)
Seasonings: Beaten into the eggs
1/3 tsp of salt
1/3 tsp of black pepper
1/4 tsp of Dano's Original (there is no salt in this seasoning)
1/3 tsp of parsley
1/3 tsp of basil
1/4-1/2 tsp of Herbs de Provence
Instructions: chop all vegetables and herbs, put to the side. Heat oven to 375. If having meat, place meat in the skillet and cook until done. In a medium size bowl crack eggs. To the eggs add all the seasonings and beat together. Drain meat. In casserole dish place all the chopped ingredients and spread around. Next add drained meat. Mix together. Now add seasoned eggs, Mix together. Add cheese, mix together. Place in oven and bake for about 15 minutes (check and see if the eggs are done). Take out, eat, and enjoy.
