Spinach Dip
2 cups bechamel
1/2 cup packed greens (spinach or beet)
1/2 cup Parmesan
1 1/2 cup mozzarella, divided
1 1/2 tsp onion power
1 tsp garlic powder
1 tbsp parsley
salt to taste
Chop greens and blanch beet greens until soft or sautee spinach until wilted.
Add everything except 1/2 cup mozzarella together and mix well.
Spread into a buttered baking dish that is broiler safe and top with the remaining 1/2 cup cheese.
Bake at 375 until bubbly, or microwave until bubbly, then broil 2 - 3 minutes until golden brown.
Serve with bread, pitas, tortillas, or whatever you like.
