Feeling thankful for my borrowed plot of earth that the Lord has provided me. I've tried to make best use of it over the years as I pray it pleases the One who has provided. As I looked out into the garden this morning, I couldn't help but get excited for all that is hidden under the snow. Oh how the variety of herbs have increased over the years and how even the garden veges have differed. And now even the size of the garden has expanded. My canning jars have been filled with an assortment of things over the years because of it. From simple tomato recipes, plain old green beans, beats and corn to what is now a variety of complete meals in a jars, sauces and sweet syrups, single veges of all kinds and fruits and berries. And from beyond the Garden, now have jarred meats from wild turkey to fresh caught salmon. I look forward to adding new things this year and teach others how to bring back into fashion, the old ways. I am sooooo ready to see that plot of earth plowed and ready to seed the dirt with new things this year. For that sweet rewarded opportunity, should He see fit to bless us with the abundance again. I can't wait to jar-up the harvest as soon as it's available.
Have any of you seasoned home preservers given any thought to what your planting this year and what you wanting to you line up your shelves and pantries with yet? Are there some other preserving techniques your wanting to dive into this year? So many choice ways, from proper freezing, water bath, and high pressure canning, dehydrating, fermenting, smoking, pickling, jellying, root cellaring, salt curing and sugaring. So many options to do it ourselves, so much healthier and cheaper.
Wouldn't we all just love to cut out 75 % of our time in the grocery stores, saving our money? or putting it to far better uses? Not to mention eliminating all those so called preservatives and unnecessary additives that have only caused us health issues that are now being managed by prescriptions, with even more side effects. If now is not the time to take back our health and teach our children how to take care of themselves as they get older, when is right?
