Fermented for 36 hours and baked in-house daily.

Behind every great loaf of sourdough is a long fermentation process, quality flour, and a seasoned starter.

The process begins with our signature dough, made with organic unbleached flour and a mature sour starter.

Next, we ferment the dough for 6–8 hours at room temperature before stretching, folding, and shaping it by hand.

Once shaped, each loaf then undergoes a second fermentation, this time in the cold for another 30 hours, allowing the flavors to deepen.

Lastly, it’s baked creating a soft, airy crumb and chewy golden crust.

A versatile choice for building sandwiches, dipping into soup, or tossing in a pan to make croutons.

Organic Fera fruit oil is expeller-pressed from oleifera fruit grown on Regenerative Organic Certified® farms in Colombia. By using Fera for Clean-Frying® at our Cafés, we’re proud to support regenerative agriculture and the farming practices behind it.
