Lunchbox Conversations #2:

Nongshim Budae Ramyun is the brand’s attempt to rebrand what used to be their K-Army Stew (IYKYK). It is inspired by budae jjigae: a post-Korean War dish that combined traditional Korean staples (Gochujang, kimchi, and instant ramen) with processed foods from United States military bases (spam, hot dogs, and chili beans). Add a slice of American cheese on top, and your taste buds will melt from joy faster than the cheese did.

Despite the tragic origins of this dish, budae jjigae is considered a staple comfort food, born from survival and sustained with love. Perhaps a reason this dish is beloved is that it touches on grief and gratitude: grief for the hardships endured and gratitude for the creativity and resilience shown by those before us in making the best of what was available. Perhaps the lesson was to give us, future generations, a blueprint of what’s possible even when it feels impossible.

Lunchbox Conversations is an idea that I’ve been working on since 2021. I had and still have these big dreams for it, but progress has been painfully slow. Imagine simmering a delectable pho broth, but instead of 4-12 hours, it’s taken 5 years. That’s how I feel with Lunchbox Conversations.

I had, and still have these big dreams for it, but to achieve the vision I have, I have to take the first step to actualize it; put it out to the world and see where it might go.

So here’s the first step: a series of my thoughts on food, culture, and identity, shared unfiltered, as if we were colleagues having lunch. And because it’s meant to be a conversation, I’d love to hear your thoughts in the comments.

I love it when my two favorite subjects overlap: food and sports. The best part isn’t the unique products like this soccer-shaped cookies-and-cream ice cream, but the conversations that are started.

The exchange of joy and knowledge after customers asked about my FIFA Mexico jersey lightened up an otherwise exhausting day.

I asked one of them who they were rooting for, and they said England or France.

His friend jokingly poked at him, “Why aren’t you rooting for your own country?”

I inquired, “Where are you from?”

He replied, “Ghana.”

“I’ll rep your country then,” I promised, “I’ll get a Ghana jersey.”

The jersey is on its way.

The World Cup may be a competition, but to me, it’s a celebration; a celebration of different cultures, sportsmanship, and unity.

Good luck to all of the World Cup teams.
