Beloved chocolatier Diana Schroyer- Robins isn't just the name helming the Yummy Tummy Cottage; it’s also the name of the expert confectioner who has taken chocolate covered treats to a whole new level. Starting in 1998 in her home on a little island in the sun in SW Florida, her craft has followed her up the eastern part of the US where she now bakes and handcrafts candies and chocolate covered d

elicacies outside the Philadelphia area. From the beginning to end of the chocolate-covering process, Diana assures the same great sweets known up and down the east. Her goal is to help bring back traditional handmade candy arts to the party table. Walking into Diana’s cottage you can see the efforts of the artisan chocolate production from the freshly made pots of different source chocolate spreads that have been shaped and flavored, focusing on their origin to create the product you enjoy! That chocolate then covers fresh seasonal fruit and favorite salty treats. Perusing this sweet cottage there are the neat, colorful little jars of sprinkles, nuts, and favorite candied toppings lined neatly on the buffet once belonging to her husband’s grandmother; surrounded with jarred ganache, chocolate-covered dried fruits, and artisan candies such as cherry cordials, peanut butter cups, chocolate toffee, truffles and her scrumptious candied apples. This self-taught confections master started over a decade ago with chocolate-covered pretzels where she took common ingredients and reinterpreted classic recipes. Each creation brings out a new flavor profile that enhanced the original idea. She still utilizes this technique today, with the large selection of desserts and candies found at the Yummy Tummy Cottage, and works to keep her sweets natural while using the best raw materials and her ever growing list of customers’ family favorites. Experiencing Diana’s kitchen cupboards you smell the sweet creative potential. Each shelf is full of wholesome baked goods ingredients and a refrigerator full of fresh cream, and pure Irish butter used to craft customers’ favorites from brownies to scrumptious pound cakes, charming mini cakes, Crème Brûlée, candied nut banana bread, scones, chocolate chip iced oatmeal cookies and everything in between. Diana uses fresh, seasonal, mostly local, organic and common favorites; customers get to choose their ingredients and their perfect party tray. BROWNIE COOKIES

INGREDIENTS

• 115 g semisweet chocolate (you can use dark chocolate too)
• 2 butter spoons
• 1/3 cup granulated sugar
• 1 egg
• 1/2 teaspoon vanilla extract
• 1/2 cup of wheat flour
• 1 tablespoon cocoa powder
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup chocolate chips (optional)

• Chopped walnuts (optional)

INSTRUCTIONS

1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

2. In a microwave-safe bowl or small saucepan over low heat, melt the semisweet chocolate and butter together. Stir until smooth. Let cool slightly.

3. Add the granulated sugar to the chocolate and butter mixture, and mix well.

4. Add the egg and vanilla extract to the mixture and stir until well incorporated.

5. In another bowl, sift together the flour, cocoa powder, baking soda and salt. Add these dry ingredients to the wet mixture and stir until you have a smooth dough.

6. If you wish, you can add chocolate chips and chopped nuts to the dough and mix gently.

7. Using an ice cream scoop or two spoons, place mounds of dough on the baking sheet, leaving enough space between each cookie.

8. Bake in the preheated oven for about 10-12 minutes, or until the cookies are firm on the edges but still a little soft in the center.

9. Once baked, remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
