What is THIS? (What is it AND what do you do with it?)

Have you ever tried an ayote squash? Native of Guatemala, this green meat squash is similar to a butternut. You can find at the market today with vendor Kai Moua on the far SE corner of the market. Check out some ideas for how to use it. (Market is open until noon). Two more markets after today. Come see us and try a food you haven’t before!

Common Ways to Use Ayote Squash

1. Roasted or Baked
• Cut into wedges or cubes (remove seeds).
• Drizzle with oil, salt, and pepper.
• Roast at 400°F (200°C) for 30–40 minutes until tender.
• Optionally add cinnamon, paprika, or brown sugar for flavor.

2. Soups and Stews
• Peel and cube the flesh.
• Add to soups like sopa de ayote
• Simmer until soft; it adds natural sweetness and creaminess.

3. Boiled or Steamed
• Boil chunks with a bit of salt or broth until tender (10–15 minutes).
• Mash and serve as a side dish with butter or coconut milk.

4. Ayote en Miel (Sweet Dish)
• A traditional Central American dessert.
• Simmer ayote pieces in panela (raw cane sugar), cinnamon, and spices until soft and syrupy.

5. Puree
• Cook, then mash or blend for:
• Pie fillings
• Baby food
• Smooth soups

The Marshall Farmers Market will continue Saturday mornings through the end of October; however, tomorrow, Sept. 13, is the final live performance session of the season. Come on out between 9-11a.m. for Purpose Artisans Drum Circle. This interactive community-focused musical art invites everyone to be part of the music. What participants do:

Play Drums & Percussion: No experience required; drums and other percussion instruments are provided.

Follow & Create Rhythms Together: Engage in group improvisation and rhythmic patterns.

Relax & De-Stress: The repetitive, shared drumming is therapeutic and calming.

Connect with Community: Meet people of all ages and backgrounds in a fun, inclusive space.

Express Creativity: Everyone contributes to a collective sound, making it a shared artistic experience.
