🔥🍑Grilled Peach & Arugula Salad🥗
(Serves 2 as a main course or approximately 4 as a side salad)
Ingredients
▪︎ 5 oz arugula
▪︎ 3 grilled peaches, sliced
▪︎ 4 oz goat cheese, crumbled or Burrata
▪︎ ½ cup candied pecans or toasted walnuts
▪︎ ¼ small red onion, thinly sliced
▪︎ Grilled Peach Vinaigrette
Optional Additions: Prosciutto or Grilled chicken, Fresh basil leaves
Peach Vinaigrette Ingredients
▪︎ ¼ cup Bottled Treasures White Balsamic (or our Blenheim Apricot White Balsamic)
▪︎ ½ cup Bottled Treasures Basil Olive Oil
▪︎ 1 teaspoon Dijon mustard
▪︎ 1 teaspoon honey (optional)
▪︎ Pinch of sea salt
▪︎ Fresh cracked black pepper
Directions: Whisk together balsamic, Dijon, honey, salt, and pepper. Slowly drizzle in the Basil Olive Oil while whisking until emulsified. Taste and adjust seasoning as needed.
Substitutions: For the honey, you can try maple syrup or Agave. For the mustard, go with plain Greek yogurt.
