Did you know that you can eat ALL parts of a beet? Today, I’m turning these beet “greens” from into a delicious sauté with just a bit of garlic, red onions from and a squeeze of lemon juice from our very own trees. Thanks for bringing so many excellent growers together !

Yes, this is a post about parsley. Have you seen anything so beautiful!? 😍

I’ve been raving about parsley for a while now. (As a Lebanese, I KNOW parsley.) Took my sister to the last weekend, and made her taste a leaf. It makes you feel like you’ve never had parsley ever before. (She took half my bunch…I think she’s also been converted.)

Parsley has so many health benefits. Aside from generally promoting more plant-based food in your diet, parsley is high in vitamin K, C, A and antioxidants. It can help blood to clot (in a good way), contributes to bone health, and can reduce the risk of serious health conditions like diabetes, heart disease, and cancer. It’s also really great for neurological health.

Store it in a jar of shallow water in a cool place to preserve, but it really is best used fresh. Try it in a salad (like tabbouli) or a sauce (like chimmichurri). It also makes for a bright and lovely garnish to most meals. 🌿

Good news for my local lovers!! is in big time planning mode (sorry for the silence. and. why does everything take so much longer than you want it to??). One of our visions is to sweep more and more local goods into our retail stores and products.

So, imagine walking in to the smell of fresh bread and along with your warm loaf, you find local produce, cheese, jams, oils and more.

We currently have a quite a bit on our shelves and in our produce case Mesa but we want to build upon this and start incorporating more and more local into our menu where it makes sense.

This is the essence of Proof. When .baker and I began building a sourdough business out of our garage, we learned so much about our local food economy. At markets, we met so many great growers and makers. We wanted to celebrate those relationships and often found ourselves creating from what was seasonally available. I recall some interesting combinations, like a local beet sourdough and partnering with to make a carrot/carrot top pesto loaf.

For the past few years we’ve been focused on finding the right infrastructure and building, and that’s taken a lot out of us (including a downtown Mesa dream that we dearly loved). We’ve had to do what’s economical, and while we’re still slowly climbing out of this hole, we have our eyes set on the future.

We want to honor our market roots by honoring our fellow makers, just like we did here with ! And we want to inspire you to source locally because well, it’s just better!! Better for you, better for our local economy, and better for your health. There’s a lot of scary stuff out there, isn’t it better to know where your food comes from??

Every time they’d post a drop, we’d literally have hoards of people calling our shop. Since then they’ve saved enough to invest in a . It’s a pretty amazing story and even more amazing, authentic people.

is another family-owned, home-based business (and you know we love a , right 😉). Ashley is a self-taught baker who believes in eating CLEAN. All their sweets use and ingredients because as Ashley says “cheap ingredients taste cheap!” We met during one of our first holiday markets and it’s been love ever since!

From the beginning, this place was built on community by community. There’s a real beauty in having a dream, building that dream, and sharing it. We couldn’t have done what we’ve done over these past three years without our local community and all your support.

What a journey. From the early days of trepidation and uncertainty following a global pandemic, to becoming a community staple, to the troubling realizations of a capitalistic economy. Here we are. Humble beginnings to humble endings.

This will be our final week serving you with fresh produce and goods. Come shop with us one final time from 12/5-12/10.

And then join us the following week for a MSH yard sale from 12/12-12/15. We will be selling all of our remaining equipment, displays, and odd lots. With the holidays around the corner, who knows what you might find?
