Yes, you’re supposed to slurp your olive oil — and there’s a real reason for it 🫒

Warm a little in your cupped hand to wake up the aroma, give it a smell, then sip and slurp — that pull of air spreads the oil and brings out the flavor. It’s the proper way to taste, and the real trick to telling two oils apart: one turns out fruity and mild, the next grassy and peppery, and you can taste exactly which one you prefer. Right now, every olive oil on our shelf is from the Northern Hemisphere crush — pressed in October and November. Any week now, the Southern Hemisphere oils arrive and we start fresh.
A little backstory: we filmed this video back in February. The "four more months" Hardie mentions? That math is just about up.
Here's why this matters: olives are a fruit. The fresher the press, the better the oil. Our supplier, Veronica Foods, works on a two-hemisphere harvest cycle so the shop is always carrying recently-pressed oil — never sitting on a shelf for years like most grocery-store bottles. Right now, we're in the in-between moment: Northern oils at the tail end of their peak, Southern oils about to land.

Extra Virgin Olive Oil: you know it, you love it, but… do you know what “extra virgin” really means?! Valid question. 📝🫒

Not to get TOO scientific, but here’s the scoop:

Basically, to produce olive oil, olives are picked, crushed, and cold-pressed to extract the oil. It’s best to do this mechanically, without heat or chemicals, for a clean, mechanical process that keeps all the good stuff (flavor + nutrients) intact.

From there, it’s all about acidity. Regular virgin olive oil can have up to 2% oleic acid, while extra virgin sits below 0.8%. Translation: EVOO = smoother taste, better quality, and packed with more antioxidants and health benefits!
