Good evening to all of our F&M Clients & Fans,

We have come to the decision that in the best interest of F&M quality and reputation, we will need to suspend our weekly menus temporarily due to outside obligations. However during this break, all outstanding gift certificates will still be honorable for any choice of our past weekly menus posted on Facebook.

Again, we expect this to be only temporary. We are working very hard in improving different aspects offered by F&M and hope the end results will be enjoyed by you. We will keep you posted as our different projects are realized and up and running.

Bringing it back....

Not Your Mother’s Meatloaf - Meatloaf is one of those irresistible classics that many have tried to improve with fancy mix-ins and showy techniques. But a layer of bacon is the only addition this meatloaf needs. The bacon melds with a sweet brown sugar glaze and permeates the pork and beef, infusing the entire dish with a rich, smoky flavor. From serving it doused in gravy over a pile of mashed potatoes or going sandwich style in a hoagie, this is one dish that’s hard to go wrong with.

Roasted Garlic Mashed Potatoes – A perfect vehicle for this classic meatloaf. The creamy texture and earthly taste of potatoes is heightened with roasted garlic and speckles of baby spinach.

Carrot Cake Whoopie Pies - Carrot cake conjures memories of sticky fingers and the inevitable hoarding of cream cheese frosting. So when thinking about what dessert would complete this meal and harnessing those flavors of a homespun carrot cake, whoopie pies came to mind. How could it go wrong? Two light and fluffy mini spice cakes studded with orange carrot specks held together by a delicious layer of cream cheese icing. Combination beyond delicious!

F&M says Opa!

Although a Greek grandmother will probably always be your best bet for learning the secrets of Greek cuisine, having a good Greek friend to teach you is a pretty close substitute. Growing up, I celebrated and enjoyed so many wonderful memories with her family that you would think I was lucky enough to get my hands on Mrs. Gargas’ secret family recipes too! To no prevail, I now head to Astoria for a Greek foodie fix or sometimes I’m lucky enough to find a local Greek festival.

Busy eating my way around a Greek Festival is a sight to see in itself. After tackling the souvlaki and different pies, I like to demonstrate my technique of roaming the festivities balancing an ice cold frappe in one hand while still managing to pop hot, sticky, drippy, honey syrup soaked loukoumades in my mouth without looking too much like an outsider. The music that joyously plays in the background, the wonderful variety of home cooked dishes, and the animated community that come together…make this a celebration that shouldn’t be missed.

Fig & Magpie’s menu for the week serves four.
Greek Stuffed Lettuce Leaves – These stuffed lettuce rolls are pretty similar to the cabbage version; Lahanodolmades. However, they don’t have my children running in the other direction as when they hear the word “cabbage”. A combination of beef, dill, feta, and rice rolled up into twelve delicate lettuce rolls and then topped with a light lemony sauce. Served with roasted potatoes seasoned with garlic, lemon, and oregano.

Melomakarona Cookies – Like most Greek desserts, these cookies have honey, cinnamon, and walnuts. What can I say? Greeks don’t like to mess with a good thing. These rustic yet sophisticated little beauties are a cross between a delicate shortbread cake and baklava, plus they also get better with age becoming more flaky and fragrant with time. One dozen cookies provided.

Wine suggestions: Malagousia…Is it the next Riesling? Malagousia, a native Greek white grape has a spicy nectarine flavor that's delicious with this lemony beef dish.

Special treat of the week – Melomakarona Cookies – One bite is all it takes to convince you…they are worth it! Yes, these are sweet. BUT the olive oil, honey, orange zest, and walnuts are all sources of antioxidants…so consider it a part of a healthy Mediterranean diet!

Going through one of those phases where I have a million ideas for recipes buzzing in my head, but in a contradictory way, I thought it might be refreshing to reach out to all of you and see what you might be craving or interested in trying for the upcoming weeks.
Is it something light, maybe exotic, a country we haven't covered, or possibly a past menu you have already enjoyed? All feedback and new ideas are welcomed. Also, as per many personal requests, we will be bringing back past menus once a month on the basis of their popularity.

There are few Americans who understood French comfort food better than Julia Child herself. Pulling from my past experience living in France, I have few meals more evocative of French comfort food than Poulet Vallée d’Auge and Far Breton.

In the picturesque Normandy region, eating is not only taken very seriously, but also “intensely enjoyed” with a heavy dose of fresh cream, butter and apples. Nothing wrong with that, right? Guess the apple is the balance… possibly an apple a day keeps the cholesterol away! The components of Poulet Vallée d'Auge vary surprisingly little from recipe to recipe. However, there are of course Normandy’s three signature ingredients used to create it. I opted out of using actual apples and instead supplemented it with apple brandy added to the cream sauce.

Okay, now I need to talk about prunes? There is a kind of stigma surrounding them… So unfortunate. Prepared right, these dried black jewels really are delicious and bring wonderful sweet depth to a dish. Being a big delicacy in France, Far Breton features prunes soaked in Armagnac then baked in a vanilla crepe-like batter to create an elegant but rustic dessert.

Poulet Vallée d'Auge – Chicken with onions in a Calvados cream sauce.

Asparagus and Mushroom Tartlettes - Puff pastry squares topped with bright asparagus spears and creamy sautéed mushrooms.

Far Breton - Individual custardy cakes centered with “one macerated prune” allowing every bite to vary between the thick and rich custard and juicy prune.

Wine suggestions: A Cotes du Rhone should complement the savory flavors as well as a dry, but still smooth Pinot Blanc or Pinot d’Alsace.

Special treat of the week – S&P Citrus Cookies – A citrusy fragrant cookie rolled in a sugar, salt, and ground peppercorn mix to give a surprising spark.

Dear Fig & Magpie -
My hungry boys are craving your Malaysian Chicken with Broccoli (can I order double dessert?) and Marrakesh Lamb (again, extra dessert, please!) My husband keeps asking for your short ribs (he thinks it's been long enough now and you should offer it as a staple "comfort food!") So please consider taking a break from researching new geographic areas and native cuisines, and offer some Fig & Magpie signature dishes.

Hey Fig & Magpie! Last night you delivered a Marrakesh Feast! I knew I was in trouble when my son greeted me with, “Dinner is here, look at this dessert…..I ate a piece…it’s really great.” Yeah, and half the enticing spiral was missing! Thank you for including numerous succulent veggies, it reduced my guilt in eating half the dish – it was a night my husband was working late….his loss! Please consider offering this as a dessert to order – the golden flaky “crust” and slivered nuts make this not only irresistible, but beautiful to present as well. Job well done!

Celebrated in many cities throughout South America and the world, Carnaval is days of celebration full of energy, music and dance. Maybe you can’t make it to Rio to celebrate Carnaval, but let Fig & Magpie bring you a little of its rhapsodized easy going life during these frigid temperatures outside.

A nice Brazilian dinner, a little bossa nova in the background and a glass of their national drink, caipirinhas, will bring warmth and insight of a life under the sun lived at a much slower pace.

Fig & Magpie’s menu for this week. Serves four.
- ShrimpVatapá – This is a lighter adaptation of the authentic version normally thicken with bread, manioc flour, or ground nuts. Shrimp is simmered briefly in a fragrant sauce of sautéed garlic, onions, ginger and red bell peppers combined with coconut milk, tomatoes, lime juice and cilantro served over steamed white rice.

- White Chocolate Tarte with a Passion Fruit Drizzle – White chocolate chiffon cheesecake with a coconut-vanilla cookie crust that is decorated with a vibrant passion fruit coulis.

Be sure to try some caipirinhas to help hibernate the winter away!
Guava Caipirinhas – recipe for 1 serving.
1/4 fresh lime, cut into 4 pieces
2 teaspoons sugar; try to use superfine sugar because it muddles better
6 tablespoons guava juice
1/2 oz (3 tablespoons) cachaça
Add lime wedges and sugar to an 8-ounce short glass and muddle by pounding and pressing with a wooden spoon until sugar is dissolved. Fill glass with ice and add guava juice and cachaça, then stir well.

Special treat of the week – Lemon Rosemary Palmier Sandwich Cookies – These palmiers are flavored with lemon zest and fresh rosemary then joined together with a raspberry jam filling. They are delicate and sophisticated, but still delicious enough to munch on curled up under the covers!
