Not everything has to be perfect… it can also be special ✨
This is the kind of dessert you don’t make every day, but when you do, you truly enjoy it.
Yes, it includes sugar to achieve that classic crispy top—but it’s also a reminder that balance is part of mindful eating.
➡️ INGREDIENTS ⬅️
• 1 small pineapple 🍍
• 180 ml heavy cream 🤍
• 120 g Greek yogurt 🍦
• 3 egg yolks 🥚
• 2–3 tbsp honey 🍯
• ½ tsp vanilla extract ✔️
• Pinch of salt 🧂
For caramelizing
• White sugar ☑️
Instructions
1️⃣ Cut the pineapple in half and carefully hollow out the center.
2️⃣ Dice the pulp and sauté it with a bit of honey, a few drops of lemon juice, and a pinch of salt until the liquid reduces.
3️⃣ Heat the cream with the yogurt (do not let it boil).
4️⃣ In a separate bowl, whisk the egg yolks with the honey, then slowly add the warm mixture while stirring continuously.
5️⃣ Add vanilla and a pinch of salt.
6️⃣ Place a thin layer of pineapple at the bottom and pour in the mixture.
🔥 Baking
➡️ Bake in a water bath at 160°C (320°F) for 40–60 minutes.
In my case, it took about 80 minutes due to the size of the pineapple.
👉 The ideal doneness:
• Firm edges
• Slightly jiggly center
💡 Tip: Use hot water for the water bath and preheat the oven (10–15 minutes) to reduce cooking time.
❄️ Finishing
1️⃣ Let it cool at room temperature, then refrigerate for at least 2 hours.
2️⃣ Add a thin layer of sugar and caramelize before serving.
✨ Tip:
For that classic crispy top, use a thin layer of sugar.
If you prefer alternatives, you can use allulose or coconut sugar, keeping in mind the result will be softer and less crisp.
