Ask Extension: Is rhubarb safe to eat after the 4th of July?
Answer: Yes — it’s a common myth that rhubarb becomes toxic later in the summer, but that’s not true. The main reason harvest is usually recommended only through June is to give the plant time to rebuild energy reserves for next year.

If you want to pull a few stalks on one occasion later in summer to prepare a special dish, go for it! Just know that the stalks may be tougher than those picked in spring — but your plant will be just fine.
