Paula's Delicious Spicy Beef, Cabbage and Sweet Potato Stew!
Topped with Sour Cream or Goat Cheese š
Recipe.....
Ingredients:
2 lbs Organic Ground Beef
8 cups Water
1 medium head of Cabbage, cut into 1-1/2" pieces
3 cups Organic Carrots, cut into 1/4" rounds
3 cups roughly Chopped White Onion
3 cups Sweet Potato, peeled and cut into 1" cubes
1- 28oz can Contadina Tomato Paste
1- 7.76oz. can La Costena Chipotle Salsa
1 cup fresh Corn
1- 15.5oz. can Cannellini Beans
1/4 fresh Parsley
2 tbsp crushed Garlic
1 tsp. Dried Oregano
3 tsp. Dried Basil
1 tbsp Sea Salt
1 tbsp Black Pepper
Preparation:
Brown ground beef with onion, salt, pepper and fresh garlic.
Add Water, Tomato Paste,
Chipotle Salsa, Carrots & Sweet Potato. Cook until carrots are eldonte. Add Cabbage, Corn, Beans, Basil, Parsley and Oregano.
Gently simmer, stirring often and cook until all the flavors marry and Cabbage is cooked thru.
Top with Sour Cream and or Goat Cheese.
