We had leftovers from last night!!🤗Joshua made Pork Tenderloin with mashed potatoes and green beans, topped with Broccoli, Red Cabbage, and Radish Microgreens!!😋Swipe left to see this yumminess!!🤗Surprisingly, Little Josh didn’t eat all the pork tenderloin and I was able to make this mouth drooling sandwich for lunch today!!🤤 has to be my favorite leftover sandwich to make so far!!👌Pork Tenderloin Sandwich topped with Broccoli, Red Cabbage, and Radish Microgreens and shredded cheese!!💖🌱💖🥪💖

Daikon Radish growing in it’s early stages!!🌱The first photo is after 3 days of germination!🤓The second photo is after one day of blackout!😳Look how much they stretched out searching for light!!😱The last photo was taken today after just one day of being under light!! They got so green!!🥰Now to watch it grow for a couple of more days and then we harvest!!🤗

Researchers found that red cabbage microgreens specifically contained higher levels of polyphenols and glucosinolates, which are compounds that can lower cholesterol.🤓These levels were higher in the microgreens compared to levels in the more mature red cabbage. First time growing these microgreens!!🤗Can you tell what vegetable it is by it’s first true leaf?!🤔If you guessed Kale, you’re absolutely right!!🤓Kale is known for it's many health benefits!!🤩Did you know that Kale microgreens contain metabolites from the glucosinolates that induce detoxification of enzymes, which help fight cancer?!😱Truly amazing!!🙏🏼Kale microgreens are also full of antioxidants, including beta-carotene, vitamin C, polyphenols and flavonoids, all which help against oxidative damage. Late post!!🌮We had Taco Night at our friends, Rodney and Crystal’s house to celebrate Joshua’s birthday last month!!🎊🥳🎉These were the bombest homemade chicken and beef tacos I’ve ever had!!🤤Rodney seasoned the chicken and beef sooo good!!👌and of course, we had to try red cabbage and broccoli microgreens with them!!🤗 🤤Gotta love being able to easily add microgreens into any dish and making it a bit more healthier!!🤓Something had to offset the yummy birthday cake Crystal made for dessert!!😋🎂🤤🍰😉 Thank you guys so much for having us!!🥰 We’re definitely looking forward to having more Taco Nights!!🤗Have you tried microgreens with your tacos??🤔If so, which are your favorites?!😋
