🧂 Ingredients (Feeds 6–8)
4–5 lbs mutton ribs
1½–2 tsp salt
1 tsp black pepper
Optional: sliced onion or garlic
That’s it. Traditionally, salt is the main seasoning.
👩🏽🍳 Directions
1️⃣ Preheat
Preheat oven to 325°F.
2️⃣ Season
Pat ribs dry.
Season generously with salt and black pepper on all sides.
(Mutton needs proper salt — don’t under-season.)
3️⃣ Arrange
Place ribs bone-side down in a roasting pan.
If using onion, scatter underneath for flavor.
4️⃣ Cover & Roast
Cover tightly with foil.
Roast for 2½ to 3 hours until tender.
5️⃣ Crisp the Top
Remove foil for the last 20–30 minutes.
Let the top brown and edges crisp slightly.
If you want a little extra crisp, broil 3–5 minutes at the end — but watch closely.

Frybread
Blue corn mush
Roasted green chile
Pinto beans
