Blue Mountain Meats We are a Family owned Meat Processing, Food Distribution facility in the 4 corners area Blue Mountain is divided into two divisions within the Company.

We are fully committed to the service and satisfaction of our customers!! Blue Mountain Meats was founded in 1954 by Harold and Erline Frost and is currently owned and operated by their sons Scott and Allen Frost. The meat packing plant is responsible for the production and processing of Beef, Pork, Lamb, and Mutton. The meat processing activities are governed by federal inspection with an on duty

inspector that oversees compliance with federal regulations. The warehouse is separate from the meat plant and is where we purchase, sell and ditribute foodservice products. Both the meat processing side and the warehouse work closely together to meet the needs of our customers.

🧂 Ingredients (Feeds 6–8)

4–5 lbs mutton ribs

1½–2 tsp salt

1 tsp black pepper

Optional: sliced onion or garlic

That’s it. Traditionally, salt is the main seasoning.

👩🏽‍🍳 Directions
1️⃣ Preheat

Preheat oven to 325°F.

2️⃣ Season

Pat ribs dry.
Season generously with salt and black pepper on all sides.

(Mutton needs proper salt — don’t under-season.)

3️⃣ Arrange

Place ribs bone-side down in a roasting pan.
If using onion, scatter underneath for flavor.

4️⃣ Cover & Roast

Cover tightly with foil.
Roast for 2½ to 3 hours until tender.

5️⃣ Crisp the Top

Remove foil for the last 20–30 minutes.
Let the top brown and edges crisp slightly.

If you want a little extra crisp, broil 3–5 minutes at the end — but watch closely.

🥔 Serve With

Frybread

Blue corn mush

Roasted green chile

Pinto beans

🍗🍚 Easy Chicken & Rice Casserole (Feeds a Family + Seconds!)

Made this the other night and it’s a solid, no-nonsense comfort meal. Great for picky eaters and leftovers. Absolutely Delicious!!!

Ingredients
• 5 chicken breasts (about 4 oz each), cooked & chopped
• 2½ cups uncooked white rice
• 4 cans cream of chicken soup (10.5 oz each)
• 3¾ cups water
• 3½–4 tsp chicken bouillon
• 1 can corn, drained
• 1 can black beans, drained & rinsed
• 1 small can mild Hatch diced green chilies
• Black pepper to taste
• 2–3 cups shredded cheese (cheddar or Colby-Jack)
• Optional: sweet peas (add to part of the pan if needed)

Directions
1️⃣ Preheat oven to 375°F
2️⃣ Mix everything except cheese in a large bowl
3️⃣ Pour into a greased 9×13 pan
4️⃣ Cover tightly with foil and bake 60 minutes
5️⃣ Remove foil, sprinkle cheese on top
6️⃣ Bake uncovered 10–15 minutes until bubbly
7️⃣ Let rest 5–10 minutes, then serve

💡 Tip: Taste the liquid before baking — it should taste like slightly salty soup (rice absorbs a lot).
