Every year, we feature something delicious that we make with our fruit. This year, I made a quick and simple apricot cobbler. I utilize things many people have in their pantry and two brilliant shortcuts. One reduces the baking time. This is a method and no real recipe... just "measure with your heart" as people say. Cut the apricots into slices and add a little bit of sugar, a few k***s of butter, a small splash of lemon juice, and my families secret, a little splash of brandy. Give it a first mix and microwave it (shortcut one) for a few minutes until the apricots begin to become tender, but not cooked through. Give the apricots another mix and pour them into an oven safe dish. Using the same bowl, add some pancake mix(second shortcut), sugar and cinnamon. Mix to combine the dry ingredients and a little milk to start and splash of vanilla. Stir, making the mix thicker than pancake batter but not as thick as drop biscuits. Add a little more milk or mix as needed.. Spoon the mixture over the apricot and sprinkle the top with a little sugar. Bake the cobbler at 350 degrees for about 20 minutes or until the top is beautifully browned and the apricots are bubbling. Serve the apricot cobbler when still warm with a generous scoop of ice cream.
