Hi everybody, I am closing down the shop inside Craft’d and will only be open this Friday and Saturday with all food stuffs 50% off. This weekend only!

Don’t despair. Special orders, catering, and delivery are still available. I am seeking a stand alone place so we can do more cheesy things in the future. New cheeses arriving today and Huntsman is back on the menu!

Huntsman™ is a truly unique, hand crafted British cheese produced only at Long Clawson Dairy. Huntsman™ is a trademarked name and was first created in the 1960’s at the Dairy, quickly becoming a firm favourite, and is now sold in a number of countries. It is a pasteurised cow’s milk cheese made using our traditional recipe Blue Stilton and Double Gloucester, which is a mild cheese with a characteristic light orange hue given by the addition of annatto to the milk. Flavour levels depend on the age of the cheese, but the Double Gloucester used for our Huntsman™ has a firm, close texture and a clean mellow, creamy and buttery taste. This pairs perfectly with our bold and expressive tangy Blue Stilton to create a wonderful taste combination.

Rings of the traditional Double Gloucester are moulded by hand to sandwich slightly smaller rings of Stilton to give the layered effect throughout the whole wheel, which we produce in either 3 or 5 layers. This is a time consuming process but the result is an extremely striking, visual cheese which as delicious as it is beautiful.

Don’t be cracka-lackin! Come visit us for not just your cheese needs but your cracker needs too. We have several brands and flavors to choose from as well as gluten free options and fresh baked crostinis. And we do have more Mimolette back in.

Mimolette is a cheese traditionally produced around the city of Lille, France. In France it is also known as Boule de Lille after its city of origin,or vieux Hollande because of it was originally inspired by the Dutch Edam cheese.

Mimolette has a spherical shape and is similar in appearance to a cantaloupe melon. It normally weighs about 2 kg (approximately 4.5 pounds) and is made from cow's milk. Its name comes from the French word mi-mou (feminine mi-molle), meaning "semi-soft", which refers to the oily texture of this otherwise hard cheese. The bright orange color of the cheese comes from the natural seasoning, annatto. When used in small amounts, primarily as a food colorant, annatto adds no discernible flavor.

NEW PRODUCT ALERT!!!

We are proud to have a couple tasty nuggets from Perrystead Dairy out of Philadelphia. Morgan will be in the shop until 6pm tonight (I bet she has scooby snacks😎), so stop by and let’s talk and eat some cheese!

Intergalactic is an all-American beauty. It is a soft-rinded lactic cow’s milk cheese that is coagulated with the stamens of cardoon artichoke thistle flowers, a tradition dating back to the Roman Empire (so yes, it is vegetarian!). The 3.5 oz (100g) cubes cave-ripen for 14 days, forming a melt-in-your-mouth wrinkly rind. The fudgy texture beneath the rind gradually turns fluffy and tangy towards the center core. As the cheese ages, it becomes further supple throughout. This delicate flower needs some protection so it is set on a moisture pad, wrapped in greaseproof paper, and placed in a sustainable poplar wood box.

Real Philly Schmear Cheese boasts an old-world tang and rich buttermilky flavor with silky, airy texture that highlights the beauty of fresh, local grass-fed milk. Making it year-round, we follow the seasons, so it dynamically highlights different flavor characteristics as the seasons change.
