Our Roasted Veg & Mushroom Roll is a healthy, hearty sandwich for vegetarians that even meat-eaters love! A fresh Co-op potato roll stuffed with roasted zucchini, onions, and mushrooms, dressed with roasted garlic balsamic and pesto. Enjoy it hot for the full, melty Havarti experience.

Meet Jana Kaye Gering, our September Mezzanine Artist! A local artist and instructor based in Lynden, Jana specializes in encaustic art, an ancient method of making paint from beeswax, resin, and pigment that dates back to ancient Roman Egypt. A history lesson and art to ponder while you enjoy your Co-op lunch? It doesn’t get better than that.
