Anyone who has worked with fresh milled flour understands that you don't "figure it out", you are constantly adapting and changing the way you interact with it. It is alive, and has a mind if it's own due to the different circumstances of the wheat berry's life, growing conditions, protein levels, organic or non GMO, these all affect how it works after it is ground into flour. It has not had the life processed out of it, so it remains alive and active.
I am actually fairly new to this journey of selling fresh milled baked goods, so there is a LOT of trial and error and sometimes what I sell I am not that happy with! I am so thankful for my customers and how patient they have been with me thru this process! I recently joined a workshop to learn how to understand FMF and how to work with it rather than always fighting with it like I feel sometimes is happening! Already I have learned SO much and it has changed my entire mindset about it. Many things that I have been told I MUST do, my teacher has disproven and explained how it's actually harmful to have that mindset with flour that is fresh milled. We are trying to force it to behave like commercial flour and that's simply not the right mindset.
So, all this to say, moving forward I am excited to implement the new mindset and I hope you all can tell a difference in the consistency and structure of my bread and baked goods! Most of my customers are so excited to be eating food that is actually HEALTHY and GOOD for them, and so they put up with a little fluctuation in quality and texture. I am so thankful for all of you who have stuck with me and come back every Saturday to support me!
And I want to say, feedback is ALWAYS appreciated! You will not offend me I promise, because I want to learn from my mistakes and I don't taste test from every single batch, (I'd be 500 lbs) so if something is off I want to know! π
