Authentic Roman Amatriciana 🍝🇮🇹

A classic Roman recipe built on just a few ingredients, Pasta Amatriciana highlights how authentic Italian products can come together to create something rich, comforting, and full of flavor. Crisp guanciale, tomatoes, Pecorino Romano, and pasta create a dish rooted in tradition and meant to be shared.

Ingredients
1 lb Bucatini Pasta
8 oz Guanciale
1 can Sclafani Italian Tomatoes
⅓ cup Pecorino Romano, finely grated

Instructions
Cook bucatini in salted water until al dente, reserving a small amount of pasta water.
In a pan, cook the guanciale until crisp and the fat has rendered. Add tomatoes and simmer until the sauce thickens.
Add the cooked pasta and toss to coat, adding a little pasta water if needed. Finish with grated Pecorino Romano and serve immediately.

Ambrosi & Sons invites guests to a special Corte Dei Venti Wine Tasting on Friday, June 19th at 4:30 PM, hosted by Sommelier Alessandro Nigrelli of Vinoveritas. This guided tasting showcases five wines from the family owned winery in southern Montalcino, offering a journey from vibrant everyday reds to two remarkable vintages of Brunello di Montalcino that we’ll compare side by side.

At Ambrosi & Sons, our lasagna follows the traditional recipe Rudy Ambrosi grew up with: handmade pasta, slow cooked ragù meat sauce, and creamy béchamel. It is the style found throughout much of Northern Italy and reflects generations of family recipes and culinary traditions.

The ricotta and tomato sauce version many Americans know became popular because it was a more affordable alternative for Italian immigrants during difficult times. Our chef prepares lasagna the traditional way, with rich ragù, béchamel, and fresh pasta made from scratch in house.
