During Ramadan, my team took care of me ❤️

When people ask me why I don’t just cook tamales every day…
If only they knew the work that goes into it.

From roasting and cleaning dried chiles, to preparing tomatoes and husks, every step takes time. Making the masa soft and perfect, carefully filling and folding each tamal, then steaming them for over two hours — the full process takes over 9 hours.

It’s more than food. It’s patience, tradition, and respect for the process.”
