Maine halibut here. The difference between Canadian and domestic Halibut is that domestic fish come in with the head on. This upsets some buyers. The extra weight of the head adds to the price of the fish. I don’t care. I want those cheeks. We sell the collars and a lot of the time we (try to) sell the bones and head for cheap so people can make soups and stocks. We use the whole animal.
