Most people think grilling lettuce sounds crazy… until they try it.
The smoky char from the grill, the nutty Parmigiano Reggiano, and a drizzle of balsamic vinegar turn a simple head of romaine into one of the best sides you’ll make all summer.

Grilled Romaine Lettuce
You’ll Need:
• 2 heads romaine lettuce, halved lengthwise
• 1/2 cup extra virgin olive oil
• 2 garlic cloves, finely minced
• 2 tbsp onion, finely minced
• 1/2 tsp salt
• Freshly grated Parmigiano Reggiano
• Balsamic vinegar
Directions
1. Preheat your grill to high heat.
2. In a bowl, combine the olive oil, garlic, onion, and salt.
3. Brush the mixture generously over both sides of the romaine.
4. Place the romaine on the grill cut-side up for 1 minute.
5. Flip and grill cut-side down for 2 minutes, until lightly charred.
6. Transfer to a platter and top generously with freshly grated Parmigiano Reggiano.
7. Finish with a drizzle of balsamic vinegar and a little extra virgin olive oil.
Simple. Fresh. Delicious.
