Well Meat Friends, it’s been a good run. It is with heavy hearts that we announce the closing of Porter Road Butcher at 501 Gallatin Ave in East Nashville. After 14 incredible years of serving our community, our final day of operation will be Saturday, June 14th. We are deeply grateful for the support and memories shared. Stop on by 11am-6pm through Saturday to grab some of your favorites, share a story, or just take in the shop one last time.

Silver lining, you can still enjoy Porter Road favorites around town at local grocers, some of your favorite restaurants, or shipped right to your door at porterroad.com. Thank you for everything, Nashville. We love you.

Rendered Pork Fat, also known as lard, is made by cooking all the moisture out of pork fat. It has been used in cooking for as long as we have been eating pigs. Rendered Pork Fat is a great natural fat that can be used in cooking or baking. It was used in baked goods for years before the introduction of vegetable oils and hydrogenated oils - think of it as a natural crisco. At Porter Road, we have been rendering pork fat since the shop opened, because whole animal means whole animal.

"Bone marrow compound butter adds even more flavor to your steaks! You have to try it for yourselves!! ⁠⁠⁠⁠
• I started by taking a couple marrow bones from I hit them with some salt.⁠
• Then I roasted the bones at 450° on the Ironwood.⁠
• Once the bones were cooled down I scraped the marrow into a bowl and added a stick of unsalted butter, garlic, rosemary, and thyme. ⁠
• When the ingredients were mixed well I place the mixture onto some plastic wrap and rolled it into a little log. ⁠
• Next I placed the butter mixture in the fridge to let harden back up. ⁠
• Finally when the steaks were finished I sliced couple pieces of the butter and placed it on the steaks while the rested." - 📷
