β€’ Pinch of chili flakes (optional)

2 large russet or red potatoes, peeled and diced

1/4 cup heavy cream or milk

1 teaspoon baking powder
1 cup (240 ml) milk of your choice
1 carrot, grated
9 dried apricots, rinsed with hot water and chopped
4 tablespoons raisins, rinsed with hot water
1 apple, grated

β€’ 3 tbsp unsalted butter, melted

β€’ 2 cloves garlic, minced

β€’ 2 tbsp lemon juice (freshly squeezed)

β€’ 1/4 cup grated Parmesan cheese

β€’ 1/4 cup breadcrumbs (panko or regular)

β€’ 2 tbsp chopped fresh parsley

β€’ Salt and black pepper, to taste

β€’ Lemon wedges, for serving

Instructions

1. Preheat oven:

Preheat your oven to 400Β°F (200Β°C).

2. Prepare scallops:

Pat the scallops dry with paper towels to remove excess moisture. Season lightly with salt and pepper.

3. Make garlic butter mixture:

In a small bowl, combine melted butter, garlic, and lemon juice. Stir well.

4. Assemble:

Place scallops in a single layer in a lightly greased baking dish.
