Salmon & Herb Potato Power Plate — Full Recipe
Ingredients (4 servings)
Salmon
400 g salmon fillets (about 100 g per person)
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
1 tsp dried oregano or mixed herbs (parsley, dill, thyme)
Salt & black pepper to taste
Herb Potatoes
12–14 baby potatoes (or 4 medium, cut into chunks)
2 tbsp olive oil
1–2 tbsp fresh herbs (chopped parsley, dill, or chives)
Salt & pepper
Optional: lemon zest
Power Plate Add‑Ons
2 ripe avocados, sliced
4 hard‑boiled eggs, halved
Fresh lemon wedges
Optional: fresh greens or spinach
Optional: extra herbs for garnish
(Note: amounts can be adjusted to taste; feel free to include additional veggies like salad greens or steamed broccoli.)
Instructions
1. Prepare Herb Potatoes
Preheat oven to 200 °C / 400 °F.
Wash and halve the baby potatoes.
Toss them with olive oil, salt, pepper, and fresh herbs (reserve some herbs for garnish).
Spread on a baking sheet and roast 25–30 min until golden and tender, shaking halfway through.
Once cooked, sprinkle a little lemon zest over the hot potatoes (optional).
2. Cook the Salmon
Pat the salmon dry with paper towels.
Brush with olive oil and season with paprika, garlic powder, dried herbs, salt, and pepper.
Pan‑sear: Heat a drizzle of olive oil in a skillet over medium‑high heat.
Place salmon skin‑side down first.
Cook 4–5 min until skin is crisp, then flip and cook another 3–4 min until just cooked through.
Or Oven‑bake: Place on a lined baking tray and bake at 200 °C / 400 °F for 12–15 min until done to your liking.
3. Hard‑Boil the Eggs
Place eggs in a pot, cover with cold water, and bring to a boil.
Once boiling, turn off heat and cover for 9–12 min depending on how firm you like them.
Cool under cold water and peel.
4. Plate the Power Plate
Arrange a portion of roasted herb potatoes on each plate.
Add a cooked salmon fillet.
Place halved hard‑boiled eggs and sliced avocado alongside.
Finish with extra fresh herbs, cracked black pepper, and a squeeze of lemon.
Serving Tips
Serve with a handful of fresh greens or steamed veggies for more fiber.
A simple herb yogurt drizzle or lemon‑olive oil dressing pairs nicely.
Leftovers keep well — salmon and potatoes can be chilled and used in salads the next day.
