Aging cheese isn’t a passive process. To successfully ripen their wheels, cheesemakers spend as much time in their caves as they do in their make rooms. We talked to 11 dairy pros about what goes on in there. Spoiler: washing, turning, temperature checking, and a lot of handwashing!

Fundamentally, all of our producers do the same thing: turn amazing milk into delicious cheese. But every animal, every pasture, and every farm is different!

We wanted to dig into these nuances in our new blog series: Cheesemaker Roundtable. It’s a panel of sorts; we ask our producers the same questions, and they each give unique, insightful answers.

Our first questions are about the seasonality of milk. How does your milk change through the seasons? How does that affect the cheese you’re making right now?

Farmstead cheese is a living art, and that means production of many good cheeses eventually comes to an end. As Old Chatham Creamery shifts their focus to other sheep’s milk products, this is sadly the case for Nancy’s Camembert. Changing product lists are a natural part of any agricultural business; you have to work with the land, weather, and market to do what’s best for your people and animals.

We have more memories with Nancy than we can count, but there’s still time make a few more! Get your last ooey gooey bites before this dreamy cheese is gone for good.
