The shop focuses on locally sourced meats, and the owner is a trained butcher who'll be able to do custom cuts for customers.

We are remembering today a member of the Shambles family that we lost a year ago. Howard's many years of experience and expertise in whole animal butchery were invaluable to us as we got the Shambles off the ground. Without his unmistakable air of authority and gravitas, we would have just been a couple of goofy drunks hoping to be butchers. His presence will always be missed. Rest in peace, old friend.
