Cooked to perfection by Stina.
Not that hard to do, all you need is confidence + loads of experience. Most of which is... make sure skin is dry before u hit the pan, same which needs to be reasonably hot, hot. Resist temptation to shake, move, poke for a bit. Resist some more, then allow to cook through some. Flip with spatula or other thing, much less time now, a tad of resting, a few mins off the heat. Ready to eat. My tip /and/ or pointer would be; if fish is too raw, u can always put it back on the heat, however, if it is over cooked, it is a missed opportunity for delight.
Often, it is good to fry in a mix of OO + Butter.
While I'm at it... Properly cooked fish don't care for sauces or too much else. Rödtunga in English is Witch.

Foreground, some boiled beets with feta cheese crème - they turned out fantastic. Was my sort 'a 'please, spare me the deviled eggs'.
I know it is so wrong to say that, but after a lifetime of making them for all the Smörgåsbords, Easter things, Midsummer Fests, Xmases, the Stores, Caterings n Friends, I'm like - yeah, no.

The Feta Crème; a little Lebneh, Feta, Brine, Olive Oil, Wh Bals Vin.

Snacking on it throughout the afternoon was a blast + a breeze.

Skär torsdag idag. Maundy Thursday.
Blåkulla is one of those words that I always loved as a child. To my mind it meant 'Blueberry Land', as opposed to 'Blueland' as is a more proper translation.
The latter a frightening, gaudy place full of sexual wierdety, + all sorts of violent, horrific perversions.
Thankfully, in my ignorance for grown up life, customs and hearsay, I grew up with a continued love for Blueberries.
Below a simple recipe for soup or Herring steeper.

In a pot, fresh or frozen blueberries, 5-6 cups
Scrape out a Vanilla Bean, toss in peel
Quarter Lemon, squeeze, toss in
1-2 cups Tawny Port
Half cup Red Balsamic Vinegar
A cup Wildflower Honey
Bunch cracked Tellycherry Peppercorns
A couple of splashes of Apple Cider Vinegar

Bring to a boil while stirring.
Simmer on low ~ 40 mins.

Serve hot, or let cool + toss in Herring.
