Check out this yummy Thanksgiving recipe with a twist from our friends at Kimchi Kooks!
Cooking a whole can be a daunting idea when you're living in New York City. Being a small family, here's how the Kooks like to celebrate , with herb roasted chicken with lots of garlic and white kimchi fried rice stuffing (served unstuffed) to remind us of home.
Herb Roasted Chicken with White Kimchi Rice Stuffing -Recipe by Kate
Whole chicken (4-5 lb)
Kimchi Kooks Original White Kimchi
Fresh thyme
Fresh rosemary
Garlic
Sushi or white rice
Avocado or grape seed oil
Brussels sprouts
Carrots (long thin)
Red pepper (hot long)
Scallion
Sea salt
Soy sauce
1. Submerge a whole in a large bowl of water (appx. 1 gal.) with 2 tablespoons of sea salt and 5 stems of fresh thyme. Let it sit for 2 hours and take it out of the water. Tie drumsticks together with kitchen string. Bake at 400 degrees for 1-1/2 hours.
2. Take 1 cup of sushi (or white) rice and cook with 1.2 times the amount of water to the rice until the rice is fluffy.
3. Take 7/8 cup of Original White and cut 2 or 3 times into smaller pieces. Sautée chopped kimchi in avocado or grape seed oil for 30 seconds. Add cooked rice to kimchi and stir fry thoroughly. Add 1 tablespoon of soy sauce and sprinkle with fresh cut scallion.
4. Boil a half gallon of water. Add 1 tablespoon of sea salt when the water boils. Add 5 whole Brussels sprouts and parboil for about 30 seconds. Parboil cut pieces of carrots in the same water for 30 seconds.
5. Cook 15 cloves of fresh garlic in oil in a pan for 3 minutes. Add 5 stems of fresh thyme and cook for additional 2 minutes. Add parboiled Brussels sprouts, carrots and fresh red pepper slices and stir fry for 30 seconds.
6. On a large plate, place the roasted chicken on a bed of cooked white kimchi rice stuffing with cooked vegetables. Garnish with fresh rosemary for a subtle flavor. Serve with your favorite gravy and Kimchi Kooks Kimchi'd Cabbage & Beets, a wonderful cranberry sauce substitute.
