Rosemary Orange Glazed Roasted Pork Tenderloin
Ingredients:
- 2 Pork tenderloins
- 1 bag Brussels sprouts
- 6 Yukon gold potatoes
- 5 cloves Garlic, minced
- 1/2 tsp Rosemary, finely chopped
- 1/4 cup Orange marmalade
- 2 tbsp Brown sugar
- 1/4 tsp Cinnamon
- 6 tbsp Kosher salt
- 1/4 cup Smoked paprika
- 2 tbsp Olive oil, extra virgin
- 1/2 cup Orange juice
- 1/2 Orange, cut into quarters
- Zest of 1 Orange
Instructions:
# # 1. Preheat the Oven:
- Preheat your oven to 400Β°F (200Β°C).
# # 2. Prepare the Pork Tenderloins:
1. In a small bowl, combine the minced garlic, chopped rosemary, orange zest, brown sugar, cinnamon, smoked paprika, and kosher salt to make the spice rub.
2. Rub the spice mixture all over the pork tenderloins, ensuring they are evenly coated.
3. Let the pork tenderloins sit at room temperature for about 15-20 minutes to allow the flavors to pe*****te.
# # 3. Roast the Pork Tenderloins:
1. Heat olive oil in a large oven-safe skillet over medium-high heat.
2. Sear the pork tenderloins on all sides until golden brown, about 2-3 minutes per side.
3. Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the internal temperature reaches 145Β°F (63Β°C) for medium-rare or 160Β°F (71Β°C) for medium.
# # 4. Prepare the Glaze:
1. In a small saucepan, combine the orange marmalade and orange juice. Heat over medium heat until the mixture is well combined and slightly thickened, about 3-5 minutes.
2. Remove from heat and set aside.
# # 5. Roast the Vegetables:
1. While the pork is roasting, prepare the Brussels sprouts and potatoes. Trim the ends of the Brussels sprouts and halve them. Cut the potatoes into bite-sized chunks.
2. Toss the Brussels sprouts and potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet lined with parchment paper.
3. Place the baking sheet in the oven and roast the vegetables for about 20-25 minutes, or until they are tender and caramelized.
# # 6. Glaze the Pork:
1. Once the pork tenderloins are done, remove them from the oven and brush them with the prepared orange glaze.
2. Return the pork to the oven and broil for an additional 2-3 minutes, or until the glaze is caramelized and bubbly.
# # 7. Serve:
1. Remove the pork tenderloins from the oven and let them rest for a few minutes before slicing.
2. Serve the sliced pork tenderloin with the roasted Brussels sprouts and potatoes.
3. Garnish with fresh orange slices and chopped parsley, if desired.
