Hudson & Charles is a sustainable whole animal butcher shop located in the West Village. All of our beef is 100% grass-fed and our pig and lamb are pasture raised. Our animals are never treated with antibiotics or hormones. We believe in supporting sustainable agricultural practices and local businesses. Happy Birthday UWS shop! We cannot believe that we opened 555 Amsterdam Ave 9 years ago today! How the time has passed. We are forever grateful of how the UWS community has embraced us and our mission of supporting regenerative sustainable farmers. The success of running this business has been because of this support and the hard work of our staff, past and present. We are also thrilled to announce that you are all stuck with us for at least another 11 years as we just renewed our lease for 10 more years! Kevin and I are excited for what the future has to bring the shops in the next decade, besides more grey hairs.

Beef test post incoming! slaughtered their beef practical exam! At 3 hours and 52 minutes, Rith now holds the title of second fastest beef exam a H&C! Perfect test, no notes! The passing of the beef test is 💯 percent the individuals success. The bragging rights is all Rith’s. But the rest of us at the shops are always over the moon when an apprentice makes the leap to butcher! It is the culmination of hours and days and months upon months and years of hard work. We call Rith ‘The Rithonator’ at the shop. In his words ‘I can do anything’ is his response when you say ‘Hey Rith can you…?’ Rith was scheduled to trail at the West Village shop, but he showed to the UWS location. We remember thinking, ‘Oh, this is a bad sign he didn’t remember which shop to go to’. And here we are, writing this post about Rith, one of our best! The person who really can do anything.

‘Welcome in’. ‘Thank you my friend’. ‘How can I help you my friend’. These are some of the iconic old school NYC food service phrases brought to Hudson & Charles when he started doing counter service. It may seem like a small contribution to the culture at H&C but it transformed our level of customer service for the better. When the door opens and the bell rings we all now lead with these phrases and we have him to thank for that. has also transformed. Billy, like other apprentices before him, came to learn the craft of whole animal butchery; not an easy goal to attain. But this week Billy, in just a little over 4.5 hours and with no notes, became the second fastest person to complete his beef test at H&C. Our requirements for our beef test are 1. You have an 8 hour shift to complete the test 2. Don’t cut yourself. 3. We expect perfect case ready subprimals. Billy outpaced dozens of those before him not because it was required, but because he pushed himself. We are all so proud of you Billy. You are such a pleasure to work with on the block. You make the shop a better place. We are excited to see your continued growth. Welcome in my friend.

Our first practical exam of 2025 was successfully completed by ! Rith who traded in his chef whites from a 4 ⭐️ French seafood restaurant in midtown for his butcher blacks with us, expertly broke down a whole pastured side of pork into retail cuts in under one hour. No band saw allowed per usual. For us as a whole animal butcher shop we prioritize breaking down carcasses into retail cuts. So for Rith’s exam it meant they were tested on skinning and cleaning muscles, tying roasts, and boning out sub primals. For our customers it means the meat case will be stocked with pork sirloin roasts and steaks, pork cutlets, pork stir fry and top cap, pork belly, chops, shoulder roasts and pork coppa (aka pork neck). For , who btw has been to both Antarctica AND the Artic (where he told us he saw 🐧 and 🐻‍❄️) it means they move through the apprentice program to cut beef! Rith’s resume stated that they have a ‘ welcoming and kind demeanor’ and tbh we couldn’t agree more. Rith you are such a pleasure to work beside and your hard work is paying off. Looking forward to seeing your growth with beef butchery.

We wish you all a Happy Thanksgiving. We so are thankful for you, our loyal supporters and our ever hard working butchers, apprentices and porters. And we are grateful and thankful of our continued relationship with our partner farm, . They make what we do look easy by providing those gorgeous pasture raised turkeys to us that will be the centerpieces of so many gatherings today.
