This time last year, I had the pleasure of dining at with my son, and it was one of the best dining experiences of my life.

Then this summer, we had the opportunity to return — this time working alongside and to capture photos of Kazu’s extraordinary mango sorbet and other signature dishes made with Coco Cubes Fresh Pressed Coconut Cream.

From these two masters of their crafts, I learned two lasting lessons: professionalism and perseverance. The professionalism was unmistakable — both Kazu and Alexander move with focus, calm, and total command of their domain, whether at the sushi counter or in the middle of an impromptu photo shoot.

But above all, perseverance. Neither of their journeys was a straight or easy path. Both faced major obstacles, traveled across the world in pursuit of opportunity, and never stopped learning. Even now, they continue to innovate, push boundaries, and meet new challenges head-on.

A big thank you to and for the collaboration this year, and wishing you both continued success in the year ahead.

One of a Kind

Stay Close to Nature

Nature runs on harmony:cyclical, balanced, effortless. Coconuts fall, sprout, return to the soil…the same rhythm that fed island cultures for thousands of years. Food was once part of that rhythm. Alive, simple, recognizable.

But somewhere along the way, people tried to outsmart nature.
We started growing “food” in labs.
Stretching shelf lives beyond reason.
Processing ingredients until they behave more like materials than meals.

At Coco Cubes, we’re moving in the opposite direction.
Back toward simplicity.

A Star is Born

This summer, we had the great opportunity to work with , incorporating Coco Cubes Fresh Pressed Coconut Cream into his Live Tuna Cutting Shows in Nashville, TN — “The Athens of the South,” and a city near and dear to my heart.

During his event at the , Rey treated guests to a one-of-a-kind dish made with fresh coconut cream — something no other tuna show in the U.S. has ever done. Seeing Coco Cubes featured in that stunning venue, in a city known for creating stars, was a true moment of joy. And the crowd loved it — a new flavor, perfectly in tune with the elevated, one-of-a-kind setting.

When I first heard about live tuna cutting shows, my mind went straight back to Tahiti — to a group of fishermen hauling in a magnificent tuna, their morning catch, and then preparing Poisson Cru right there at the water’s edge, in the bed of a pickup truck. They used spring water and homemade coconut cream, creating a meal that was pure energy, pure power — food at its freshest.

Thank you Rey, to see that Tahitian spirit come alive in Nashville felt like a dream come true.
