Grilled Shrimp Bowl with Zucchini, Avocado & Kale
📝 Ingredients:
Shrimp (peeled & deveined) – 1 lb
Zucchini (sliced) – 2 medium
Cherry tomatoes – 1 cup
Avocado (sliced) – 1
Kale (chopped) – 2 cups
Lime wedges – for garnish
For Shrimp Marinade:
Olive oil – 2 tbsp
Garlic (minced) – 2 cloves
Paprika – 1 tsp
Chili powder – ½ tsp
Salt & pepper – to taste
Lime juice – 1 tbsp
For Zucchini & Tomatoes:
Olive oil – 1 tbsp
Salt & pepper – to taste
Chopped parsley – 1 tbsp (optional)
🔥 Instructions:
Marinate the Shrimp:
In a bowl, mix shrimp with olive oil, garlic, paprika, chili powder, lime juice, salt, and pepper. Let sit for 15–20 minutes.
Grill the Veggies:
In a hot skillet or grill pan, drizzle oil and grill zucchini slices and cherry tomatoes until charred and tender (3–4 minutes per side). Sprinkle with salt, pepper, and parsley.
Cook the Shrimp:
Grill or sauté shrimp over medium-high heat until pink and slightly crispy (2–3 minutes per side).
Massage the Kale:
Drizzle a bit of olive oil and a pinch of salt over the kale, then massage with your hands until soft.
Assemble the Bowl:
In a serving bowl, layer kale, zucchini, tomatoes, grilled shrimp, and avocado slices. Garnish with lime wedges.
