We just tried this and can say it is DELICIOUS.

Our take on the classic Spanish cheesecake that’s burnt on the outside, wildly creamy in the middle. A swirl of gooey cream cheese ice cream with buttery salty caramel cream. Tied together with our signature brambleberry jam. Reactions in our test kitchen included shoulder shimmies, hands pounding tables, and declarations of undying love.

Grey Owl! (Not to be confused with our friends at ). When we visit Canada, this is the first cheese we search out. A stunning Loire valley style goat cheese made in Quebec, it has a deeply ashed and plush rind, a velvety smooth paste, and as you can see, a gooey, decadent creamline.
