Toledo Blade Honey Company is locally owned and operated by Lisa and Alan Kurecki in North Port, Florida. Every quart of our local honey benefits the Nazarene Compassionate Ministries - Child Sponsorship Program. There is no overhead or administration fees. 100% of all sales are used to sponsor a child growing up in an impoverished country. All of our honey is produced from local hives in south Sarasota County, mostly on our 10 acres in North Port Estates. Quantities are limited.

Just a quick update on our honey inventory status. We are down to 10 bottles of honey for sale. The bees will not start making Spring (palmetto) honey until April and it will not be extracted, bottled and ready for sale until mid to late May. If you are wanting a bottle, please let me know and I will get your name on one of the remaining bottles to save it until you can pick up. They will go very fast. Hope everyone had a merry Christmas and Happy New Year ! The bees were busy in the Apiary this Spring/Summer/Fall. Lots of honey was produced. We just finished up bottling the Fall honey in our new containers ! The new squeeze containers are 32oz (by weight) and have a flip top lid. Since they are not quite 32 fluid ounces we will only be charging $20 each. We have about 60 available. After these are gone, we will not have honey until the Spring honey in Early May. Thanks to everyone that purchased our honey in 2025 !! We were able to add 4 more children to our Sponsorship Ministry in 2025. We have a total of 11 sponsored kids now !

Just a quick update on our honey inventory. Currently we have about 35 quart jars of Spring/Palmetto honey available. We also just harvested the summer/Cabbage Palm honey and have 25 jars of it as well. We will not have our Fall/Peppertree honey until sometime late November. $25 per quart jar. So after many months of being out of honey, the bees are producing copious amounts of palmetto honey. The honey this spring has a great flavor profile. I think it was due to the extended winter we had. We are officially back in stock and have plenty quart jars of honey available ($25). Pictured is just a small portion of the honey we have harvested so far. As a reminder, our honey sales are used to support our Child Sponsor Ministry. We sponsor 7 children through the Venice Church of the Nazarene NCM and will soon be adding 6 more children !! Please contact us if you would like to have a jar set aside. For those that were not aware, hurricanes Helene and Milton inflicted a “one-two” punch on the flora in Sarasota County leaving the blooms/nectar needed for the bees to make Fall honey completely diminished. Due to this, no fall honey was produced. In fact, we had to feed the bees artificial nectar and pollen several weeks after Milton just to give them enough resources to get through this winter. We do have just a few jars of summer honey (cabbage palm) available. We hope to have Spring honey available (God willing) in April/May next year. The good news is that we have enough funds available to continue to sponsor our 8 children until the Spring honey is available to sell. Please pray for a normal Winter weather pattern. 🙏🏻

How do I fix crystalized honey? Most honey will eventually start to crystalize. When your honey starts to have small crystals of what looks like granulated sugar suspended in it and it starts to get "gritty", this is the crystalization process. This is easy to fix. Place your honey on your vehicle's dashboard on a sunny day for 3 to 4 hours. This will warm your honey to 110º. The bottle should be very warm to the touch. Pull it out and shake for a few seconds. The crystals will melt and your honey will be clear and smooth again for a very long time. Do not let it go too long or it may get too hot. It won't hurt the honey, buy it will kill all the beneficial enzymes in your honey. Ever wonder why supermarket/commercial honey does not crystalize ? It is pasteurized (heated to 150º+). This process kills all the beneficial enzymes but stabilizes it so that it will store for a long time and not crystalize. Raw honey will never be heat treated.
