Lincolnshire Poacher (in the back)
This farmhouse cheese is made in Lincolnshire, England with raw cow’s milk and aged for 12–24 months. It boasts a smooth, bouncy texture with aromas of barley and brine and flavors of dried pineapple, hay, and candied pecans.
Ticklemore (middle)
A semi-soft bloomy rind pasteurized goat’s milk cheese from Devon, England that absolutely exudes luxury. From the supple cream line to the pillowy center, you’ll find flavors of lemon curd, wet slate, and crème fraîche.
Cornish Kern (bottom)
A hard cheese made from pasteurized cow’s milk in Cornwall, England. Often considered a Gouda/Gruyère hybrid, it has a crumbly texture with complex flavors of tropical fruit, browned butter, and a hint of romaine lettuce.
