Located in one of the most convenient and accessible area in Southeast Wisconsin, our second and brand-new dairy plant—fully dedicated to cheese aging, cutting, and packaging—welcomed its first batch yesterday! 🧀💪

A great reminder of how lucky we are to be part of the Wisconsin cheese industry!
A community that not only supports each other but also takes the time to celebrate one another’s successes.

It felt great to unwind, reconnect, and enjoy quality moments with our cheese friends in Madison at the Wisconsin Art of Cheese Festival, before gearing up for the next exciting chapter of our business journey in Milwaukee.

🥇 We did it again! 🧀
Our Raclette cheese took 1st place at last night's American Cheese Society competition in Sacramento, California — and earned a spot in the Top 10 cheeses in North America!
This marks the second time our Raclette has won top honors, and while the award celebrates our products and the craftsmanship behind it, it means so much more than that.
It’s a recognition of the hard work, the setbacks, and the entrepreneurial determination it takes everyday to build a brand from the ground up and showcase what Wisconsin artisan cheese manufacturing is all about.
Some years you win, some years you lose. But the real challenge, especially nowadays, is to continue to create and advocate for locally made dairy products that stay affordable and accessible to all, without compromising on quality.

Last week was a whirlwind of cheese, innovation, and connection across two continents!
We kicked off with an incredible visit to several state-of-the-art cheese factories in Switzerland, alongside our valued partners at Kalt Maschinenbau AG. It was inspiring to see the precision, tradition, and innovation that defines Swiss cheesemaking at its best.
From there, we headed back to Chicago for our Wisconsin Cheese Makers Association board meeting, where we also had the pleasure of touring the impressive Cheese Merchants facility in Bartlett, IL.

To top it all off — we’re thrilled to share that our Raclette earned Second Place in the Washed Rind category at the Wisconsin State Fair Cheese Contest! 🥈

We’re proud to be standing shoulder to shoulder with some of the best in the business — right between Emmi USA, who took both First and Third in the same category. Congratulations to them and all the other award winners!

From laying more bricks in our new dairy plant 🧱 to welcoming a French cheese 🧀 delegation right in the shadow of the iconic Lambeau Field 🏈 in Green Bay, thanks to the U.S. Department of Agriculture and the Wisconsin Department of Agriculture, Trade and Consumer Protection (DATCP), it’s been a full and exciting few days of building, both physically and through partnerships.

We also wrapped up an insightful capstone project with a brilliant group of students from the University of Wisconsin-Madison, diving deep into the U.S. market potential for Raclette.

And to top it all off, we checked in on the progress of our soon-to-be-released new cheese at The Center for Dairy Research and let’s just say, it’s aging to perfection. 👌
