It's official! Tallow-tilla is now sourcing our tortillas AND beef tallow from Wisconsin farmers!

Our Tortillas are now sourced from Tortilleria Zepeda in Lone Rock, WI. They have perfected the pre-Hispanic nixtamalization process to create the most authentic Mexican corn tortilla. They use only locally sourced Wisconsin organic corn and personally know each farmer, which makes an impact on our local food system.

Tortilleria Zepeda uses a traditional corn production process called nixtamalization in which dried kernels are cooked and soaked in an alkaline solution, usually water and food-grade lime. After that, the corn is drained and rinsed and then ground in volcanic stone grinder to produce “masa” that forms the base of numerous food products, including tortillas and tamales.

Unfortunately with the industrialization of food production, this process is not being practiced in mass production of tortilla making. Nixtamalization process is quite simple, however industrialized tortillas are much more complicated, with the added chemicals, preservatives, artificial gums and over processed production of the corn.

Additionally, our grass fed beef tallow is now sourced from Whole Harvest Meats in Waterford, WI! Free from additives or preservatives – just clean, wholesome fat from cattle raised the way nature intended. The primary reason to choose grass-fed tallow is its superior nutritional profile, which comes from cattle raised entirely on a natural grass diet. This results in tallow richer in beneficial fats like Conjugated Linoleic Acid (CLA) and a healthier balance of Omega-3 fatty acids, unlike conventional tallow. This not only offers potential health advantages but also contributes to a cleaner, richer flavor that perfectly complements and crisps our tortilla chips.
