Zucchini Stuffing Rice Casserole
Here’s another zucchini recipe that we absolutely love. It’s creamy, crunchy and cheesy and it’s absolutely delicious. It’s perfect for bringing to a barbecue or serving your family as a side dish. Either way, if you love summer zucchini, this is a must make.

2 zucchini’s diced
2 tablespoons olive oil
Salt and pepper
1 c cooked white rice
6 oz box stuffing any flavor
10 oz cream of mushroom soup
1 c chicken broth
1 c cheddar cheese shredded
Heat the olive oil in a skillet and add zucchini. Cook over medium heat until softened and moisture is released. Season with salt and pepper. Let cool a bit. Add to a bowl with rice, mushroom soup, stuffing, broth and cheddar . Transfer to a 9 x 9 prepared baking dish. Cover and bake at 375 for 30-35 minutes. Remove foil and place under broiler for a few minutes to brown and crisp the top.
