Currently being run by the 3 rd and 4 th generation, our family has been a part of the San Francisco Bay Area Italian Dry Salami Business for generations. We take the time and pride to make a product that holds true to the integrity of an old world tradition. It is because we have chosen to remain a small family business that we, at Milan Salami, can refuse to compromise the integrity of the proce

ss to maintain a quality product. Our salami is slow aged to remain true to the old world traditions of salami processing; it is from this technique that the salami gets it deep flavors and complexity, much like a fine wine. Because we have chosen to not jeopardize the integrity of the product and the process it takes to acquire it, we can offer you a truly superior traditional Italian Dry Salami. Our Artisan made Uncured Dry Salami’s are made with special blends of spices and quality wines then slow aged to perfection. There are no added nitrites. Instead of using the traditional chemical based sodium nitrates and nitrites, we use naturally occurring nitrates and nitrites from celery juice powder and sea salt. Our product is shelf stable but should be refrigerated after opening for quality. We are currently working on our website but should be up soon!
