It's so easy to make pineapple scrap juice and I found the coolest use for it so I had to share. I made pineapple jam and decided to put the peels and cores to use so I covered them with water, boiled them down and added the sugar according to other juice recipes. They sat dormant for a while and I thought I may have wasted my time as they weren't perfect for drinking. Well if you're obsessed with Hawaiian sweet rolls youre in for a treat. This juice that would've otherwise been wasted made an amazing contribution to home made Hawaiian sweet rolls. Comment if you're interested and I can make a tutorial of both the juice and the rolls.

Things are happening at the homestead! Radishes and lettuce coming in nicely. We've been eating on the lettuce daily! Cucumber plants getting big, tomatoes galore, beets starting to form, beans flowering, green beans testing us with a few here and there but all will hopefully be producing soon!

Kimchi started! It already smells delicious! If you have never had kimchi it is a fermented Asian salad with loads of health benefits! Today I used about 1/3 of the Chinese cabbage I am growing this year.
