Good evening,
We would like to start by introducing ourselves. We, the owners of Cask Republic, would like to thank you for your support of The French Bulldog over the last three and a half years. With the phenomenal food, wonderful wine selections, and incredible owners and staff, it’s been a great place and a valuable asset to the Dundee community. Upon hearing of the opportunity to own such a great place, we knew we couldn’t pass it up. Over the past few weeks, we have had a chance to speak to Anne, Phil, and Bryce and learn about their passion and energy, the rich history of Dundee, and the process of creating a destination restaurant. We, the new owners, talked at length about how we could maintain what people have come to love about The French Bulldog. Upon learning that Bryce, the award-winning charcuterie chef and owner, was starting a new chapter of his life, we knew we had to try and find an equally talented chef to come in and carry on the level of culinary expertise and create what Omaha has come to love about The French Bulldog. Over the next few weeks, we discovered what a daunting task this would be. After speaking amongst ourselves, reaching out to the community, and most importantly gaining the approval and support of Anne, Phil, and Bryce, we ultimately decided to move in another direction.
Our goal is to continue to provide a great place for the Dundee community and all Omaha area residents to come and enjoy a great meal with wonderful drinks in an exciting yet comfortable atmosphere. Although it may be a bit of a gamble in becoming the first local establishment to offer a full poutine menu, it’s something we love and are very passionate about. Combine this with the amazing craft beer, wine, and spirits selection we will offer, we are confident that we have a place that you will come to love. You may still see Anne, Phil, or Bryce around the place over the next few months, as they continue to show us tremendous support and have offered to help us get our place off the ground. We invite you to come out and continue to support the Dundee community and all the local ownership of the Dundee area and give our place a try. We hope you continue to support our friends, wonderful people, and creative restaurateurs, Phil and Anne, and the great food at Amsterdam Falafel and Kabob, as well as continue to support the talented, and all around great guy, chef Bryce Coulton, in the next chapter of his culinary life.
