This is a great place for me to keep you updated on new products and when I will be at a farmers market near you. Remember, I can always do special orders. I have been playing around a lot this summer with small batch pickles. So far I have made spicy bread and butter baby carrots, sriracha pickled eggs, and spicy zucchini pickle spears. Did I mention these are all refrigerator pickles? I am not heating up the kitchen, and I find myself being much more creative. Have you created and fabulous concoctions this summer?

I was making a bit batch of collards tonight, and I could not help but feel some dismay when I saw the big pile of stalks piling up. SO I decided to pickle them! In mid process now, details to come!!

Pickling some Fairy Eggplant before I head to work. This is an experiment with some gifted eggplants. They are so cute! Added some garlic and fresh basil, and used a nice red wine vinegar.

Refrigerator Beet Pickles!! I was able to pick up a small batch of beets at the store on sale, so I made some quick beet pickles. These are not the sweet kind you typically find, but spicy!. Roast the beets in a foil lined pan with a bit of water for about an hour. let cool for a few minutes, and the skins will slide right off. Cut however you like, I like mine in bite size pieces. Pack in a jar with some red pepper flakes and a few cloves of garlic. The brine is 1 cup water, 1 cup cider vinegar, and 2/3 cup sugar. Let sit in the fridge for a few days, then enjoy!
