Don’t let barbecue beat you! You don’t have to spend hours at the smoker to get a delicious dinner.
Grab a 3 lbs boneless butt, thaw it out, and then cut it into chunks. Throw those chunks into your pressure cooker with your favorite oil and sear it for a few minutes on each side. While it’s searing, season it with your favorite meat seasoning (I like one with some brown sugar for pork).
Then, add 1 cup of apple juice (or your liquid of choice- Dr Pepper and orange juice both work great!) and a splash of apple cider vinegar.
Cook the pork for about 1 hour and then let it naturally release the whole way.
Pull the meat out and shred it with a fork- it will FALL APART! Then you have pork for dinner- but then maybe even leftovers for the rest of the week! I love leftover bbq on top of a sweet potato for an easy, healthy lunch.
