Today is the final day to order our limited-edition Midsommar Granola.

Made with strawberry, elderflower, and cardamom, this seasonal release was inspired by summer in Sweden and the flavors that arrive around Midsommar. Bright berries, fragrant elderflower, and warm cardamom come together in a granola that captures the feeling of the season.

We only made 50 cases, and once this batch is gone, it won't return until next year.

Our Midsommar Granola is ready!

This is our first seasonal release for 2026, and it’s all about summer in Sweden.

Midsommar Granola
Strawberry • Elderflower • Cardamom

We wanted this one to feel like the start of berry season. In Sweden, wild strawberries show up along field edges and in the forest right at the beginning of summer. Smaller, a little tarter, and a lot more concentrated in flavor than what you find in the store.

Elderflower is another classic this time of year. It’s used for cordials and desserts around Midsommar, and it has that light, floral flavor that just says summer.

Put those together with cardamom and you get something that’s bright, a little different, and really fits the season.

We made a small batch of this one and it won’t be available in stores. We’re making 50 cases total, so once they’re gone, that’s it.

Something yummy is coming! We’re getting close to our first seasonal product release for Midsommar.

Delivery of our special Swedish summer granola starts on June 6th and lasts through June 23rd. There will be a limited number of cases available, but you can pre-order as soon as we announce the seasonal flavor!

Summer is a big deal in Sweden. After the long, dark winters, people really make the most of the light and the season. This is when simple foods shine. Fresh berries, yogurt, and a bowl of granola or muesli when you want something quick and satisfying. That’s what inspired what we’re working on now.

This will be a limited release, not carried in stores, so watch this space for our Midsommar Granola announcement!

Happy Spring!

Over here at Trollbok Farm we have been busy making our Swedish-inspired granola and muesli using bold Nordic flavors and simple ingredients. Think lingonberry, mulberry, blueberry, and cardamom, lightly sweetened with date and agave syrups instead of refined sugar. Our goal is simple: bring a little Scandinavian breakfast tradition to your table.

New for 2026: We’ll be creating a series of seasonal varieties inspired by Swedish flavors. These won’t be carried in stores, and will be available for a limited time only. More on the first release soon! Stay tuned…

Hard to believe we are getting to the end of 2025! It has been an interesting year, with lots of changes here at Trollbok. We have set the cheese project on the back burner for a few months as we work on scaling our granola business. Thrilled to announce that as of January 2026 we will be selling our granola and muesli in Whole Foods stores here in the northeast region. Woohoo!

Our cheese molds come in many colors!

We're starting to think spring might be coming soon! This season is a time of renewal, and that is true for us here at Trollbok Farm as well.

When we took over our building four years ago, it was with the idea that we would build a cheese factory. While we worked on that idea, we opened up our farm store and bakery.

It has been awesome over the last few years to get to know our community through the store! It has been a pleasure to bake for you and share our Swedish food culture.

But now it is time to focus on our Flavors of Sweden product line including (drum roll...) our cheese! After a couple of years of product and market development we are going fully to market with our Swedish Farmer Cheese and other FoS products, including our granola.

This is primarily a wholesale business, so we have closed the store permanently. In the meantime, you can buy our cheese locally in Franklin at Good Taste Epicurean Market. Tell Mark we said hi!

We look forward to working with our local dairy farms to produce our cheese. We inaugurated our new partnerships with our first batch of cheese made at Trinity Valley Dairy in Cortland this week.

We are so excited to be moving on to our next phase in bringing businesses and economic support to our local community and small farms.
