Ok I'm going to do a little information on how to pick your Prime Rib/Standing Rib Roast for Christmas. A Prime Rib Should always have a bone. This helps keep them moist and juicy. The butcher should cut the whole Prime Rib with a knife not a saw. A saw will put marrow and bone shards in your meat and generally make it look bad. The butcher should then remove the Rib portion and tie it back on with slip knots. This allows you to equally season all around the meat even between the bone and roast. It then allows you to be able to carve it with a knife by cutting string instead of trying to remove bone after it's cooked. If your prime rib is cut right through the bone with a saw and then the rib never removed and retyed, you've been had. That is how hacks without basic butcher knowledge perform. This year while shopping look how their Prime Rib is cut. Figure 1 is how it should be done. Figure 2 is your cheap basic Rib Roast.
