One of the unique seasonal finds at the Oxnard Farmers Market is chayote squash! A favorite in Mexican, Central American, and Caribbean cuisine, chayote has a mild flavor and crisp texture that makes it incredibly versatile in the kitchen.

Try it sliced fresh into salads, sautéed with garlic and onions, added to soups and stews, roasted with other vegetables, or even stuffed and baked. It’s also packed with fiber, vitamin C, and other nutrients while being naturally low in calories.
