Wow just wow, the kimchi and sauerkraut this year is the best we have ever made, the colors are unbelievably vibrant and the love is palatable. This season marks our full integration into the Old River Trading post location, a place of connection, community, and relation to the land. You can feel the vibration of a rooted and vibrant place in our product, the place where we learned 9 years ago where to make our product. Jake and I learned to make fermented foods here at the Trading post from our teacher Chrys Bailey who studied in Japan with fermenting experts. Our roots run deep in this place and our return here is felt in the deepness of flavor of the kimchi this season.
We are in crested butte and Aspen all summer and have product on Indigo Autumn, Farm Runners, and Mana Foods in Carbondale and through the Producers market in paonia and the Food Movement which delivers to the Roaring Fork Valley and of course, our self serve fridge at the Trading Post.
